On December 28, 2002, eight years after I came to Otaru and 20 years after becoming a sushi chef, I was able to have my own restaurant in Otaru, which I had dreamed of for many years.
Since then, we have been practicing every day, and everyone is enjoying the fresh and delicious local sushi and seafood.
We will continue to aim to be a store that is loved by everyone, and all the staff will be cheerful and energetic, without forgetting our original intentions and gratitude to our customers. Please enjoy the special ingredients such as large toro, medium toro, salmon roe, sea urchin, crab, abalone, and botan shrimp to your heart's content. At our shop, we offer salmon (Kage) all year round, which is also called Toro. The charm of salmon is the melty texture and the umami of fat.
High-quality fat melts on the tongue, and the elegant sweetness spreads throughout the mouth. Since there are only 1 or 2 salmon in every 10,000 fish, it is hard to see them even in the suburbs of Sapporo.
Please enjoy the precious salmon from Rausu at our shop. In addition to sushi, we also offer a large number of seafood dishes that take advantage of the taste of the ingredients.
